“I give back to the people what I was able to rescue from the artistic heritage of its ancestors.”

The name “Pascual” is a nod to San Pasqual, the patron saint of cooks and kitchens — a fitting tribute for a restaurant whose heart is its fire and its craft.

Pascual is a celebration of fire, flavor, and heritage — a wood-fired Mexican bistro on Capitol Hill where every dish tells a story. The restaurant was born from the vision of Chef Isabel Coss, who brings together deep ties to Mexico City and decades of culinary experience.

Since its opening on February 15, 2024, Pascual has quickly gained recognition. It has been featured among Eater’s Best New Restaurants in America (2024), and Michelin has added Pascual to its Washington, D.C. Guide, calling it a standout in its class.

Just as our kitchen celebrates fresh, honest Mexican ingredients, our bar honors the same values: small-batch mezcales, local spirits, and flavors rooted in the earth.

We believe in letting Mexico speak, on the plate and in the glass.
